This coffee brought to us by Red Fox Coffee Merchants is extremely special. It is a micro-lot coffee produced on a single hectare farm by Roberto Quispe Hanco and his team, tucked away in the high hills of Puno. It was processed and dried on raised beds under parabolic covers at the nearby cooperative by the name of Tupac Amaru. The covers allow for consistent drying and even airflow, while protecting the coffee seeds from precipitation. Interestingly, it was dry fermented for 14hours, rather than being rested in fermentation tanks.
We strive to find the most unique, small-lot coffees that evoke a special experience for the consumer and we absolutely hit the nail on the head with this one. The interesting tasting notes and juicy body will remind you of what’s familiar about Peru coffee while presenting complex characteristics you can find in a cup of Kenya.
